And just like that, it’s out with the shamrocks and in with the homemade peeps! It feels so early to be celebrating Easter, but I am so ready for it and everything that comes along with it. Warmer weather, longer days and beautiful layer cakes adorned with fresh fruit – definitely ready for it!
There’s so many fun Easter cakes and confections to make that I had to put together a round-up of my favorites. One of my other favorite things about Easter are the Cadbury mini eggs! Does anyone else have a problem with these, as in cannot be trusted to open the bag! Last, but certainly not least are my go-to Cadbury Mini Egg Blondie Bites! If you love blondies and mini eggs, these are for you. I love filling little gift bags with these for guests to take home after brunch. They’ll be so happy to have them on Monday – if they last that long!
There’s nothing I’d rather see at my brunch table more than this Raspberry Crumb Cake! Filled with fresh raspberries and topped with an epic amount of crumb, this is one recipe you’ll find yourself making again and again, and again!
As for those beautiful layer cakes adorned with fresh fruit, this Raspberry Lemon Ruffle Cake will definitely be the highlight of your desserts table! Layers of tender white cake filed with bright lemon curd and covered in the best raspberry buttercream! Seriously, that raspberry buttercream is everything!

Meyer lemon season may have passed, but I can tell you this Lemon Blackberry Layer Cake is just a delicious with regular lemons! This dreamboat of a cake is filled with layers of blackberry compote, lemon curd and homemade whipped cream, and then covered in a Grand Marnier blackberry buttercream. Garnish this one with loads of fresh berries for a beautiful presentation!
There’s no way I can talk about dreamy, fruit-filled desserts without mentioning my favorite Lemon Blueberry Cheesecake! This light, creamy, mile-high classic cheesecake is filled with fresh lemon zest and draped in fresh blueberry compote – just try to keep your hands off this one!
