Good morning friends. Did everyone have a good weekend? I was beyond busy with a wedding cake and happy to report that everything went extremely well. The bride and groom loved it and you can check out some pics on facebook. So I find after a few days of marathon baking, a good cookie can do wonders. Luckily, I dressed up my favorite oatmeal cookie for fall, and made them jumbo, like we’re talking the size of my head here. Okay that’s a little dramatic, but you get the point. So one of these and maybe a glass of wine, and all the crazy seems to calm down a bit.
You know what’s even better than treating yourself to a nice warm, soft, inviting cookie?? Treating someone else! And today these cookies are going to my grandma because she still has no power. She is fine and staying with my parents, and although I know that in the grand scheme of things we are so lucky this is our only issue, it must be disheartening after nine days. So there’s not much I can do about her power, but you better believe she’s gonna be fully stocked in the cookie department!
Okay, so these cookies are what all cookies should be. They’re warm, chewy in the middle, slightly crisp around the edges, and sure to bring a smile to your face. The combination of dried cranberries and peanut M&Ms is so good, I don’t know why I didn’t think of it sooner! They’re super easy to throw together and you can either make them jumbo or little. For all who have asked how to shape cookie dough, this next pic is for you. Shape it like you’re making a hamburger. When you shape it evenly, it will bake evenly
Would you just look at all those good oats and cranberries packed in there! And I don’t know about you, but any time I can see little specks of vanilla bean, I instantly get happy. Before I popped them in the oven, I stuck a few extra peanut M&Ms in them for a little extra Then send them off and within minutes your house will smell like warm, cinnamon-y goodness.
After you take them out, you’ll be looking at something like this. I told you these were good! All you have to do now is go make a batch, and don’t forget to share! - 4 ounces unsalted butter, room temp
- 1/2 cup light brown sugar
- 1/4 cup sugar
- 1 egg
- 1 teaspoon vanilla bean paste or vanilla extract
- 3/4 cup AP flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 & 1/2 cups oats
- 1/4 cup dried cranberries
- 1/2 cup peanut M&Ms
- Cream butter and sugars till light and fluffy.
- Add egg and extract.
- Mix in flour, salt, and baking soda.
- Mix in oats and dried cranberries.
- Gently mix in M&Ms.
- Divide dough in to 4 ounce portions and chill a few hours to over night.
- Bake cookies at 325 degrees for 21-22 minutes rotating once halfway through.
Make sure cookies are cold when they go in the oven so they bake evenly.
Take cookies out of the oven when they are just about 45 seconds from done because they will continue to bake once you take them out.
Store cookies in an air tight container at room temp when baked.
Cookies can be made smaller if you prefer. Just remember bake time will be different. For 1/2 ounce cookies: Bake at 325 degrees for 14-15 minutes.
