Who’s ready for the official, unofficial start to summer? I’m always pretty pumped about Memorial Day weekend and after this past winter, I don’t think I’ve ever been so happy about it! It’s time to get on board with ice cream sandwiches, boozy milkshakes and the best no-bake peanut butter pie in town! And I kind of think that after all the snow we had, it should be mandatory to eat all the ice cream we possibly can this summer. Deal?
So I put together my favorite summer sweets for you guys. It was no easy task, but I finally narrowed it down! These are the desserts I make and share throughout the summer, and I hope you will too!
Let’s kick off the festivities with Red, White and Blueberry Cupcakes! These are party perfect and I’m thinking all those berries balance out the swirls upon swirls of cream cheese frosting, right?
After this winter, I say ice cream all day long! This is hands-down the best chocolate ice cream I’ve made, and it’s about a million times better when you scoop it in a sprinkle-ized cone! Sprinkles for life!
It’s not summer until someone breaks out the s’mores! I take mine in the blender with a little of the good stuff! Boozy S’mores Shakes are a party waiting to happen!
Just when I think it can’t get any better than boozy milkshakes, Nutella Frangelico Ice Cream Sandwiches remind me that it can! I’m talking two soft baked Nutella cookies sandwiched with Frangelico ice cream and then rolled in dark chocolate. Need I say more?
We cannot even talk about summer desserts, or any dessert for that matter, without mentioning the Ultimate No-Bake Peanut Butter Pie!
If you’re feeling more fruity than chocolatey, Key Lime Pie with a Twist is a must! It’s super light, refreshing and that gingersnap crust is everything!
It’s still a little early for peaches, but as soon as they arrive bake this Peach Crumb Cake! Doused in a vanilla bean bourbon glaze, it’s pretty magical… Bourbon everything!
As soon as it gets too hot to turn the oven on, I make a batch of Strawberry Margarita Granita. If you’re unfamiliar with granita, it’s kind of like a slush – a great fruity, boozy slush! Enough said!
If you were a fan of strawberry shortcake ice cream pops, you’re going to love these Strawberry Rhubarb Ice Cream Sandwiches! The strawberry rhubarb ice cream hits all the right notes and is pure heaven paired with the soft baked brown sugar cookies. It’s also a really great recipe to try if you’re just venturing into the world of rhubarb!
Easy, no-bake and there’s Nutella involved! I don’t think these Nutella Krispie Treats are going to take too much convincing and sometimes, simple really is best! These are one of my go-to summer treats and a drizzle of chocolate with a sprinkle of sea salt dresses them up for entertaining!
