There’s nothing like a stack of cookies to bring a smile to your face, and right now these have me smiling from ear to ear!  Today’s recipe is a simple one and one you should make – like right now!  I took one of my favorite cookie recipes and tweaked it a bit to create sweet and salty bliss.  It’s the type of cookie that bakes slightly crisp on the outside while remaining soft and chewy on the inside. One that warms you up on a cold day, and one that is sure to keep you going back for more.

As much as I love these cookies, I had to restrain myself because they’re not for me.  I’ve mentioned before that I love sending care packages, and  that’s where these cookies are heading.  It’s something I’ve always loved doing and I think it’s a really good reminder to just stop, slow down and think about others.  I’m sure most of you can relate that it’s very easy to get caught up in the day-to-day stuff, and maybe overlook the very things we are so lucky to have.  Over the past week or so I’ve gotten quite a few reminders about just how much I have to be grateful for.

So, into the kitchen I go to bake some cookies.  I like to send really comforting cookies so I opted for a soft brown sugar cookie and filled it with white chocolate.  I added some pretzels to balance out the sweet and tossed in some pecans for an extra layer of flavor.  I’ve gotta tell ya, the nutty flavor form the pecans totally sealed the deal!

Then I packaged them up in some cute treat bags.  You might notice evidence of my nibbling nearby…  I thought I’d be set having one – you know for quality control purposes and all.   And then I came across this gem below.  I don’t know if you can see it, but it has Meghan written all over it ;) And all those vanilla beans floating around in there make me so happy, they’re like sparkles!

I have to admit at this point, I thought they would never make it out of the house.  But with a cookie in my mouth and coffee nearby, I wrote a little note and finished packaging them up.

White Chocolate Pretzel Pecan Cookies

White Chocolate Pretzel Pecan Cookies

Yield: approx. 30 cookies

Serving Size: 1 oz.

Ingredients

  • 8oz. unsalted butter, room temp.
  • 3/4 cup sugar
  • 3/4 cup light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla bean paste or extract
  • 2 1/2 cups AP flour
  • 1 t. baking soda
  • 1/4 t. salt
  • 1 cup white chocolate chips
  • 1/2 cup lightly toasted chopped pecans
  • 1 cup broken up pretzels

Instructions

  1. Preheat oven to 325 degrees.
  2. Cream butter and sugars till light and fluffy.
  3. Add eggs and vanilla bean paste.
  4. add flour and baking soda.
  5. Mix in white chocolate & pecans.
  6. Gently mix in pretzels.
  7. Scoop cookies into 1 ounce portions and bake at 325 degrees for 12-13 minutes.

Notes

You can bake the dough as soon as you make it. If you want them to look more round, chill the dough for a few hours first.

You can substitute chocolate chips for white chocolate chips.

Please note not all ovens are created equally, so keep an eye on them. The key to super soft cookies is to take them out about 30 seconds from done.
