Who’s ready for some weekend baking? I wanted to pop in and share some of the cakes and bakes I’ve been making on repeat lately. I find that this season calls for the coziest of bakes, and quick breads, crumb cakes and cookies (always cookies!) are the name of the game! They’re the kind of treats that are perfect for dessert, snacking, brunching, you name it, they work! More importantly, they’re the kind that are easy to put together and even easier to eat!
First up is that gorgeous lemon blueberry loaf parked up top! This loaf is always my first bake of the year, and in full disclosure, there’s a piece sitting next to me right now. The bright lemon paired with fresh blueberries is always a win and offers such a welcome brightness this time of year. It’s also super versatile which is a big plus. Don’t have lemons? Use orange or lime zest instead. Prefer raspberries? Go for it!
I also double this recipe quite often so I can gift a loaf to a friend or neighbor.
Let’s talk crumb cake! More specifically, everyone’s favorite Cinnamon Apple Crumb Cake. This is one of those bakes I just cannot quit and even better, neither can you! It’s one of those cozy bakes that basically tells you to put the coffee on! It’s packed with warm flavors, lots of apple, and an epic amount of crumb – the best part, right?! My one tip for this one is to make the crumb topping first as you want to give it time to absorb the butter before you park it on top of the batter.
Next up is the Insta famous Cinnamon Swirl Quick Bread! This is the recipe that everyone seemed to make as soon as it was posted, and it is still going strong! It is one of the easiest bakes to put together and there’s something about covering the entire loaf in a blanket of cinnamon sugar before baking that lets you know this is going to be very, very good!
There’s also a layer of that cinnamon sugar running through the middle of it, and when you cut into it, it looks likes it’s smiling. I know I’m smiling too! Don’t wait on this one!
Spiced Kahlua Cupcakes are officially the cupcake of the season, and I cannot believe how many of you have already made them! These boozy little gems have so much warm, cozy flavor going on, and from the moment I shared a pic on Instagram, my inbox was flooded with requests for the recipe!
Kahlua chocolate cupcakes topped with the most incredibly lush cream cheese frosting, caramel sauce and toasted pecans are not going to take much convincing, and they’re another easy bake that you can doll up as much or as little as you wish!
If you’re going the piping route for the cupcakes, make sure to check out How-to Fill a Piping Bag video over on YouTube!
We can’t talk cozy without mentioning cookies, and these Apple Cranberry Oatmeal Cookies have been the star of the show for the past few months! They are that classic oatmeal cookie taken up a notch with seasonal staples like applesauce and cranberries. The combination of flavors works incredibly well together and the dark chocolate really adds that lush factor that always keeps me going back for just one more!
These cookies also freeze well, which is always a plus. I recommend scooping the dough and storing it in an airtight container in the freezer so you’re ready to roll whenever you find yourself in need of a cookie! Please note, you may have to add an additional 1-2 minutes on the bake time when baking from frozen.
Decisions, decisions! I hope you all have a wonderful weekend. Thanks for being here and thank you to all of you who hopped on the Sweetest Duo cookie box last week! I’m beyond thrilled that you are loving the cookies and I’m so excited about all we have in store for the coming months! We’ll be adding our Valentine’s Day cookie boxes in a few days so stay tuned for that! Spoiler alert: There will be sprinkles 🙂
Remember to keep sharing your bakes over on Instagram and I’ll see you in a few days!
Happy baking! xo
