If you’re struggling to find some dinner inspiration, or motivation, pull up a chair! These Asian chicken lettuce wraps have been a regular in my house for ages, and after whipping them up over the weekend, I knew I had to share them with you. They’re incredibly simple to prepare, packed with fresh flavor, and are an absolute staple during the summer months!
You guys know that my “balancing the buttercream” recipes have to match a certain criteria. They have to be simple, they have to be fresh, and they need to deliver big time in the flavor department. To be honest, after a full day of baking, testing, sampling, and more sampling, the thought of spending hours to make dinner is just not an option. I find that if a recipe is too involved, I’m over it before it even begins, and I’m grateful I’m not alone in this. More than ever, I think we’re all looking for ways to keep dinner interesting while also keeping it simple.
That’s where these light and bright chicken wraps come in. I love ordering them when dining out because they’re so flavorful and I love all the topping options! It’s those kind of easy, shareable and snackable dishes that I’m into right now, and I discovered that making them at home is incredibly simple!
I think what really takes this dish up a notch is the sauce. It has all the usual suspects you’d expect, including soy sauce, hoisin sauce and sesame oil, but the one ingredient that makes it sing is the fresh ginger. It adds that little zip that cuts through the sweet and brings the filling to life. After simmering with the chicken, the sweet and saucy dish is ready to make its debut. Wrapped up in fresh butter lettuce and topped with cashews, carrots and scallions, you get the best of everything in one bite.
While the options are endless, the one thing that’s a must is a squeeze of fresh lime at the end. I know it sounds too simple to be true, but the addition of lime adds a beautiful brightness and ties all the flavors together. They’re sweet, saucy, light, bright and have a habit of disappearing in record time.
Hope you guys enjoy these and I’ll see you in a few days with some fun summer bakes!

Lettuce cups is a great way to serve this kind of dish. I have coeliac disease so any alternatives to using bread is a plus for me and of course I can easily substitute for a gluten free soy sauce. Thanks for this recipe!
