Happy St. Patrick’s Day, friends! While my favorite holiday may look different this year, I hope you’ll join me in baking a little something special to celebrate.

These are the most raved about cookies and we don’t think there’s a better way to celebrate St. Patrick’s Day! Dolled-up with a drizzle of chocolate and festive nonpareils, these cookies are pretty much a party waiting to happen!

I recently stopped by Salon’s NYC studio where we chatted about the holiday, and the cookies that have become part of it. Throughout the years, these shamrock cookies have remained a reader favorite because they’re simple, fun, and they’ve got that whole Irish whiskey thing too!
The cookies themselves are simple to make and call for items that we normally always have in our pantry, and bar cart! If you don’t have a shamrock cookie cutter on hand, no worries. Simply use any 3-inch cookie cutter you have, or use the top of a wine glass if you’re in a pinch.
My biggest time when baking these shamrock cookies is to keep a close eye on them while baking. Once they turn blonde around the edges, they’re done! The cookies themselves are lovely. They have a delicate flavor and the Baileys just kind of floats around. The Baileys cream filling takes them up another notch, but if you don’t want to make the filling, you don’t have to. It’s all about making the recipe work for you.
One thing I wouldn’t skip is the sprinkle situation! In this video, you’ll notice I use a fun shamrock mix I created, but once again, use what you have on hand. This year I’m using all rainbow sprinkles because I think we can use them right now!
