Sham-rocked!
Before we dive into the sprinkles, I am so excited to share that we are now shipping our Baileys Shamrock Cookies! These are the most raved about cookies and we don’t think there’s a better way to celebrate St. Patrick’s Day! Dolled-up with a drizzle of chocolate and festive nonpareils, these cookies are pretty much a party waiting to happen!

Back to the sprinkles!
You guys, these cookies – I can’t! It all started so innocently last weekend when I was baking my go-to Baileys shamrock cookies for some very special people. All was going smooth until I realized I was out of Saint Patrick’s Day sprinkles. Before I proceed any further, I’m going to tell you right now that I am fully aware the following sprinkle tale is way more exciting to me than probably anybody else on this planet, but humor me – okay? I have cookies 🙂
So I went out sprinkle shopping and couldn’t find pretty Saint Patrick’s Day sprinkles anywhere. I mean there were a few options, but they did not scream party at all – they didn’t even whisper it.
Then I thought about this Saint Patrick’s Day cake I was working on (it’s coming next week) and how I wanted to make it really colorful and that’s when it hit me. Why don’t you make your own sprinkle mix? Why are you settling for what’s available – create what you want. I mean, everything else I want, I see it in my head and then I create it – why should this be any different?
It’s funny how sprinkle shopping can teach you so much about life. So, I turned my sprinkle-mergency into a sprinkle-tunity. New mantra right there!
I saw these beautiful, colorful shamrock cookies floating around in my head covered in rainbow sprinkles and mini shamrocks and pops of gold, and I got to mixing. I started with a good dose of rainbow sprinkles and then added an equal amount of mini shamrocks sprinkles. Next I tossed in some white non-pareils for brightness and then some gold pearlized sugar sprinkles. It was looking good, but needed a little more pop, which is when spotted the silver dragees. A small amount of those mixed in really made it shine. I will say that you don’t want to add the dragees to your mix too far in advance because they tend to lose their shiny coating when tossed in the mix.
And the result was even better than I imagined! I wasn’t originally planning on posting these, but as soon as I started dipping and sprinkling, I realized I had to share them. These definitely scream party!

Don’t get me wrong, I love the original shamrock cookies – they’re so classic, but these are so bright and bubbly!

Ingredients
- Rainbow sprinkles
- Mini shamrock sprinkles
- White Non-Pareils
- Gold pearlized sugar sprinkles
- Silver dragees
Instructions
- Follow original instructions and dip cookies in dark chocolate. White chocolate looks nice with this colorful mix too.
- Toss sprinkles together. It is better to add the silver dragees to the mix right before you're going to use them. I found if you add them too far in advance, they can kind of lose their shine.
