Who’s ready for the weekend? It’s hard to believe Easter is only a few days away and I am so ready for it, and everything that goes along with it. Warmer weather, longer days and beautiful layer cakes adorned with fresh fruit – definitely ready for it!
There’s so many fun Easter cakes and confections to make that I had to put together a round-up of my favorites. Whether you’re hosting an Easter brunch, dinner, or looking for a fun baking project, there’s something for everyone. From the cutest bunny butt cupcakes to one of my favorite cheesecake recipes, the only hard part is deciding what to make first!

Let’s hop right to it with everyone’s favorite cupcakes! These little Bunny Butt Cupcakes are bonkers popular right now, and I’m thinking it might have something to do with those fluffy buttercream tails and twinkling paws! I think they’re almost too cute to eat! You?
One of my other favorite things about Easter are the Cadbury mini eggs! Does anyone else have a problem with these, as in cannot be trusted to open the bag! Sometimes I think it’s nothing short of a miracle that any make it into the dessert, but when they do – it’s SO good! Like these Cadbury Mini Egg Cheesecake Bars! These gems are rich and decadent, and everything you love about cheesecake minus the work. And should I mention the crust is a giant mini egg cookie?
Love chocolate pudding? It’s time to ditch the box and say hello to these decadent Chocolate Cream Pies! Layers of homemade chocolate pudding, whipped cream, and crushed Oreos make the dreamiest situation! Top them with the cutest chocolate covered strawberry “carrots” for a fun Easter and spring baking project that both kids and adults are sure to love!
There’s nothing I’d rather see at my brunch table more than this Raspberry Crumb Cake! Filled with fresh raspberries and topped with an epic amount of crumb, this is one recipe you’ll find yourself making again and again, and again!
If cupcakes are more your thing, you have to try the Raspberry Lemon Cupcakes. Everything you love about the ruffle cake in cupcake form! Beautifully light cupcakes, filled with make-you-pucker lemon curd, and that raspberry buttercream is all sorts of magical!
Speaking of cupcakes, these Ultimate Coconut Cream Cupcakes are an absolute must make! The cupcakes are light with a tender crumb, and they’re filled with a lush custard that is so good, it’s a miracle it ever makes it to the cupcakes 😉 Topped with toasted coconut, mini eggs, and sprinkles, these will look gorgeous on your table!
If you’re all about beautiful layer cakes, this Lemon Blackberry Layer Cake is one of the best! This dreamboat of a cake is filled with layers of blackberry compote, lemon curd and homemade whipped cream, and then covered in a Grand Marnier blackberry buttercream.
