The countdown is on, my friends! With less than a week to go, it’s time to break out the shamrocks, the green sprinkles and the Baileys!
As I was looking through all my Saint Patrick’s Day sweets deciding what to make, I realized there are a lot of recipes here, and major decisions to be made! I also thought it would be helpful to put everything in one place, so we’ve got a sweet round-up where you’ll find all your favorites and maybe discover a few new ones! From shamrock cookies and decadent cheesecake to the happiest layer cake, there’s something for everyone!
Let’s kick things off with the cookie that started it all! Baileys Shamrock Cookies have Irish cream in the filling and in the cookies, and are pretty much a party waiting to happen!
Then I really decided to bring the party and deck these gems out with my own little shamrock sprinkle mix! I call them Shamrock Cookies 2.0, and what can I tell you, I will always find a way to get rainbow sprinkles involved. Don’t they look like a whole lot of happy?
If you’re going to make the cookies, you should definitely make the coordinating cake. Baileys Cookies and Cream Cake might just be on of the happiest (um, and booziest) cakes I’ve made! It’s made up of chocolate cake layers infused with Irish cream, and a cookies and cream filling that’ll make you want to grab a spoon and call it a day! Topped off with my special shamrock sprinkle medley, get ready to own Saint Patrick’s Day!
Moving right along to the brownie recipe you guys love most and the one I ALWAYS go back to: Bailey’s Irish Cream Brownies! These truffle brownies are rich, decadent and everything you could ever want in a brownie. As they cool, they sink a bit in the middle, taunting you until you grab a spoon…
They’re the kind of recipe that makes you want to throw yourself somewhere due to the fact you’ll be completely defenseless to its powers, and the kind that makes you want to rock a cape like you’re the super hero of the baking world.
Bring it!
If blondies are more your thing (hey!) you’ll definitely want to dive into these Baileys Irish Cream Blondies! These blondies are full of flavor from the brown sugar, espresso powder and of course, the Baileys!
The best part about these blondies is as they bake, some of the white chocolate chunks caramelize creating even more depth of flavor. Just try to stop at one!
I’m just going to put it all out there and say this Irish Coffee Cheesecake is the cheesecake to end all cheesecakes. Chocolate cookie crust, Baileys cheesecake and a Jameson chocolate ganache that’s like buttah!
When you want cheesecake without the work, you want Boozy Irish Cream Cheesecake Pops! These gems are so easy to make and they’re great for parties! My favorite way to serve these is to set up a dessert bar with a bowl of magic shell and a few bowls with different topping, such as sprinkles, crushed Oreos and toasted pecans and then let your guests do the dipping! It’s a great way to get guests involved and there’s something for everyone!
I think my love language may seriously be tiramisu. It’s one of those classics that never gets old, and I love coming up with new variations, like the Nutty Irishman! This twist on the classic drink combines Baileys Irish cream and Frangelico into one magical tiramisu. This is one of those desserts that gets even better the longer it has time to mix and mingle, and it’s no-bake!
From dessert to brunch, let’s discuss these Irish Coffee Scones. Yes, I did put booze in the scones and the only thing I was left thinking was why did it take me so long to do this?
These are definitely a little different texture wise and flavor wise than traditional scones (yay!) in the sense that they are more team cake than team biscuit, and the sugar in the raw sprinkled on top of the golden crust is everything. Oh, and they’re even better with a schmear of whiskey butter.
Whiskey. Butter.
Speaking of brunch, there’s nothing better than a loaf of traditional Irish Brown Bread! I can tell you this is the best brown bread recipe I have ever made and that’s because it comes direct from one of my dearest friends. It’s one of those recipes that needs no tweaking, always turns out perfect and reminds me of home. Whether it’s to pair with a traditional Irish breakfast, dinner, or a cup of tea, brown bread is a must on Saint Patrick’s Day!
And I saved the best for last! The Irish Whiskey Layer Cake is one of those cakes that should be made all year, and most definitely on Saint Patrick’s Day! Whether you’re hosting a dinner, or throwing a major bash, this is sure to be the star of the show.
Layers of whiskey infused chocolate cake, filled with Irish cream buttercream and topped with spiked mascarpone whipped cream! And should we talk about that Jameson ganache dripping down the sides?
