Would you like a slice?  Today’s post is a good one guys!  Not only are we talking about this bourbon apple spice cake, but there is also a fantastic giveaway involved!  To start off, this is one of those cakes that I truly wish I could just hand you through the computer.  It’s perfect as dessert, a little snack, or even breakfast.  It’s not overly sweet, and is full of warm flavors that just scream fall.


This is one of those comforting fall recipes you will find yourself making again and again.  It’s super easy to make, and ten minutes into baking your house will smell like warm fall apple happiness.  Now I’m about ready to make it again!  Obviously the apples are the highlight of this cake, but I love the walnuts in it too.  They offer the crunch factor that the cake needs, and all the spices and brown sugar add lots of fall flavor.  Of course I had to add a little bourbon which adds such a warmth to it, and gets along so nicely with all the other ingredients.

When it comes out of the oven it looks like this.  Do you see how it gets slightly crisp on the top? That is what you’re looking for.  You will probably find yourself staring at it like I did waiting, and waiting for it to cool down so you can take a bite.  I actually stared at  this quite a bit due to the fact that I made it four times.  You read that correctly, I made it four times.  The first three were to tweak the recipe and make sure the bake time and temp were spot on.  The fourth time was because I needed to photograph it.

As you can probably imagine, I had a lot of apple cake.  Everyone around me had a lot of apple cake. It’s kind of amazing that I still like apple cake, it’s just that good!  One morning I’m staring at the apple cake and I thought I might as well have a little slice for breakfast, you know for quality control… Next I look over at my toaster that the lovely people from Magimix sent me.  It just so happens that due to the great design of this toaster, it will toast a thick slice of apple cake…  It also happens that those lovely people from Magimix are giving one lucky Buttercream Blondie reader their own toaster! So, the apple cake is in the toaster and then I remember the whiskey butter from the Irish Coffee Scones, and it had to be done.  So i quickly whipped up a little bourbon butter, and just like that I fell head over heels for this cake all over again.  This is just one of those cakes that’s great any time of day, and in my book, a little bourbon butter is always a good thing.  This is sure to become a staple in your fall baking and the toaster is sure to became a staple in your kitchen.  Good luck entering the giveaway!

Bourbon Apple Spice Cake

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1/4 cup light brown sugar
  • 3/4 cup oil
  • 2 Tablespoons bourbon
  • 1 teaspoon vanilla bean paste or extract
  • 1 and 1/2 cups AP flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 3/4 teaspoon cloves
  • 1/2 teaspoon allspice
  • 1 and 1/2 cups peeled and diced apple
  • 3/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees and spray a loaf pan with nonstick.
  2. Whisk eggs and sugars together in medium sized bowl till they get lighter and thicker.
  3. Whisk in oil, vanilla, and bourbon.
  4. Start mixing in the flour, salt, baking soda, cinnamon, cloves, and allspice. If mixture gets to thick switch from a whisk to a spatula.
  5. Stir in diced apples and walnuts.
  6. Pour batter into a loaf pan and bake at 350 degrees for 65-70 minutes rotating once halfway through. Cake is dome when toothpick comes out clean.

Let’s talk about this  fabulous toaster and giveaway!  First of all it’s made by Magimix, so it’s top of the line quality and after using it for several months now, I can tell you I love it and it will always have a spot on my counter.  Second is looks, and this toaster is pretty.  It’s got a sleek design and the glass panel means you can watch your bread toasting.  This probably means I’m easily amused, but it also means those days of burning your toast are long gone.  Here are some details:

It has four quartz heating elements that produce crisp, uniformly browned toast so you can say goodbye to burnt toast.

It has four preprogrammed heat settings including toast, bagel, reheat and defrost.  I think the bagel setting is one of the coolest things!

Extra-wide slots accommodate the thickest bagels and toast.  This means you can toast apple cake!

Built to last for 30,000 uses.  That’s a lot of toast!

This toaster retails for $250 at Williams-Sanoma and also comes in black, cream, and red.  I really like the stainless steel especially since it goes with all my pink appliances!  As I mentioned, the folks over at Magimix are generously giving one stainless steel Magimix vision toaster to one lucky Buttercream Blondie reader!  Good luck!

    I love a pile!!! of fruit jam on top of warm, buttered toast. Makes me feel like I am getting my “fruit” serving. Ha Ha. Not too sweet of jam, mind you. Then you really can’t taste the fruit. But just enough sweetness to bring out the flavor of the fruit, but not mask it as too much sugar does.

    I dont think I would bother putting anything on it. It looks so yummy & scrumptious just as it is. Just reading all the ingredients, I cant imagine covering them up with anything else!! I would love to have that beautiful toaster. I couldnt put a slice in the one I have from Walmart 🙁

    I’ve made this bread half a dozen times already. I live in the heart of apple land (the Yakima Valley in Washington State) and this was just what the Dr. ordered for my “apple a day”. Thanks! Oh…and the neighbors are really liking the loaves I keep bringing over to pay them back for all the apples they’ve been giving me.
