Nothing like a cupcake filled with bright meyer lemon curd, topped with a cloud of fluffy mascarpone frosting to brighten a cold winter day. And that cake roll sitting pretty up top – a slice of sunshine!

While I think they’re perfect as punch as is, if you’re a lemon lover, do not skip filling them with homemade meyer lemon curd. Trust me on this one! Save a little to schmear on that blueberry lemon loaf this weekend too.
Continuing on with cupcakes you need in your life, these little Meyer Lemon Mascarpone Cupcakes check all the boxes! The cupcakes themselves are heavenly, and the whipped mascarpone frosting is like a fluffy cloud you’ll want to dive right into.
When you want something sweet, and kind of breakfasty, brunchy and snacky all at the same time, make this Meyer Lemon Blueberry Loaf. It’s one of those bakes that gets even better the following day, and that drizzle of glaze adds just the right amount of sweet and pucker. Go for it!
What better way to wrap this up than to pretty much hand you a margarita in cookie form? Blood Orange Tequila Shortbread are everything, and I literally almost killed myself getting to the blood oranges when I spotted them the other day. Boozy shortbread and margaritas – all about it right now, and this is such a great recipe if you’re hosting friends for an Oscars party.
