Simple, sweet and sassy pretty much sums up my favorite Key Lime Pie. If you’re looking for an easy dessert that always hits the spot and is sure to impress mom this weekend, this is it! Traditional key lime pie gets a sweet upgrade with the addition of fresh lime zest and spicy gingersnap cookies, and the result is nothing short of divine. It’s the kind of pie that has you wanting seconds before you even dig in!
When I think of Mother’s Day desserts, I automatically think light, pretty and Spring-y. I normally make a cheesecake, but this year I wanted something a little lighter, something that would be great for brunch or dinner. That’s when Key Lime Pie popped in my head and since it’s one of my grandma’s favorite desserts, it was a done deal!
The first thing I did to zhush up the traditional pie is add fresh lime zest to the filling. It’s amazing how a little zest releases so much flavor and makes the whole thing pop. The smooth, creamy filling is baked on top of a gingersnap crust, which pretty much makes life complete. Dramatics aside, the gingersnap crust adds so much, you’ll never go back to graham cracker again!
The pie bakes beautifully and some fresh whipped cream on top is the icing on the cake! I actually got to share this pie a weeks ago with my mom and grandma and it received rave reviews all around. The gingersnap crust was the talk of the table and we couldn’t believe how incredibly light it was. It’s great whether you’re doing a brunch or dinner, just don’t expect there to be any leftovers!
