Easy, cheesy and ready in under 30 minutes?  Count me in!  It’s finally starting to feel like Spring around here and I think a little balancing the buttercream is in order.  Cozy comfort food that’s easy to put together and consists of real ingredients is always a win, and this one pot cheesy chicken and broccoli rice checks every. single. box.  It’s satisfying, yet light, and you know what makes the whole situation even better?  A sweet new cookware set to whip it up!

So let’s talk about this chicken dish first.  It is one of my go-to dishes because it’s so easy to toss together – hello, who has time for time consuming when you’ve been busy baking ALL day!  Even more so than that, it’s packed with flavor and that’s major because let’s face it, sometimes chicken dishes can be blah.  You know what I’m talking about?  And nobody has time for that!

There’s a few things that contribute to the flavor parade happening here, the first being we cook the chicken pieces for only 2 minutes per side just to get a nice golden color and to lock in the flavor.  Then we sauté onion and a good dose of garlic (don’t fear it, we’re seasoning rice, chicken and broccoli here!) and cook everything in chicken broth.  Even the chicken finishes cooking with the rice in the chicken broth so everyone really has time to mingle and get to know each other, hence the flavor parade.

I tossed in some fresh broccoli towards the end along with a good dose of cheddar cheese.  I’m telling you, it’s one of those dishes that’s so simple, but SO good!  It’s creamy and satisfying, and the leftovers are everything.  It’s the dish I make when I’m cooking for people and I don’t know what they like, or I know they’re picky, because it’s always a crowd pleaser.

One Pot Cheesy Chicken & Broccoli Rice

Kick your week night dinner up a notch with this easy, cheesy one pot chicken dish. Filled with whole ingredients, this delicious dinner will quickly become one of your go-to meals and one the whole family will enjoy!

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breasts, cut into bite sized pieces
  • 1 tablespoon butter
  • 1 small onion
  • 3 cloves garlic, finely chopped
  • 1 cup extra long grain rice
  • 2 1/2 cups chicken broth
  • 2 cups broccoli florets, cut into bit size pieces
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a Farberware Dishwasher Safe Nonstick 11-inch Everything Pan over medium-high heat. Season chicken with salt and pepper and cook for 2 minutes per side. Remove chicken from pan and set aside.
  2. Head over to Farberware for the remainder of the Cheesy Chicken and Broccoli Rice Enjoy!

    My go-to is chicken teriyaki — pop the rice into the rice cooker, grill the chicken, make teriyaki sauce, and steam the broccoli. Takes about 35 minutes.

    Quesadillas are my go to. Flour tortillas crisp up so nicely when fried. Or to go more healthy, they can be thrown in the oven on a cookie sheet and baked. My favorite filling is large shrimp sauteed in garlic butter, then put on top of the flour tortilla, sprinkle on some chopped green onion, add shreded monteray jack and mozarella cheese, flip the tortilla in half to form a half moon shape, and fry on both sides. Oh my, now I’m hungry.

    By the way, these are amazing pans. I LOVE my set!!!!!
