Red, White and Blueberry Cupcakes

Piled high with fresh berries and topped with a sweet cream cheese frosting, these light white cupcake are also filled with blueberries, raspberries, and a subtle hint of almond – a must for summer celebrations.

It’s time to bring on the red, white and blue and what better way to do that than with cupcakes! These super light, white cupcakes are filled with blueberries, raspberries and have just a hint of almond floating through.  Piled high with cream cheese frosting, these red, white and blueberry cupcakes deserve an invitation to all your summer celebrations!

So these lovely little gems are the kind of cupcakes that bake up so pretty, you might actually think for all of a split second that they don’t need any frosting.  I think we all know that’s crazy talk.  One thing I can assure you of is that between the almond extract and berries peeking through, you will most likely polish off a few before you even get to the frosting!

I topped them with a sweet cream cheese frosting, which turned out to pair beautifully with the light cupcakes.  I mean, when is cream cheese frosting not a beautiful thing?  Piled high with lots of berries, they look like a party waiting to happen!

These cupcakes bake up beautifully and that little hint of almond extract really makes them pop.  The berries floating around make them taste like summer in a cupcake and I think we’re all on the same page about that sweet, cream cheese frosting parked on top!  Since these are light, white cupcakes, I suggest making them either the day of or the day before to ensure they stay really fresh, especially with all those berries.
