I’m just going to come right out and tell you, it’s time to make some adjustments to your weekend plans! I know it’s about a million degrees outside, but this is so worth turning on the oven for. I promise. You know those days when you really want a warm, gooey, soft-baked cookie, but don’t have the time to make cookie dough, chill cookie dough, portion cookie dough, bake cookie dough, then wait forever for cookie to cool just enough to not completely scald your mouth?
You’re looking at the answer. This s’mores cookie skillet is everything you want in a dessert and then some! It’s incredibly easy to make, and we should definitely talk about how the edges crisp up beautifully, while the center stays super soft and gooey, and kind of makes you not want to share at all!
While I can come up with just about any excuse to bake on one these gems, I love making it for girl’s night. It’s one of those no-fuss recipes that everyone loves and raves about. I mean, it’s filled with 2 kinds of chocolate chips, mini marshmallows and topped with rainbow sprinkles – what’s not to love?
You’ll notice as the cookie bakes, the mini marshmallows peeking out the of top toast ever so slightly, making them melt-y perfection with the chocolate chips, and a pinch of cinnamon in the cookie dough is that one ingredient that I think really balances it. It’s not a prominent flavor, but one of those things that plays a nice supporting role enhancing the rest of the production!
The only thing I suggest, besides digging right in, is to top it with a scoop of ice cream, or three! Drizzle some chocolate sauce over the top along with some crushed graham crackers, about a million rainbow sprinkles, and don’t forget the cherry! Serve it right in the skillet, and get ready for everyone to sing your praises.

Ingredients
- 6 tablespoons (3 ounces) unsalted butter, room temperature
- 1/2 cup light brown sugar
- 1/3 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup milk chocolate chips
- 1/2 cup mini marshmallows
