The countdown is on and the shamrock cookies are flying! St. Patrick’s Day has always been my favorite, and while it’s definitely different this time around, I’m beyond thankful you continue to make Buttercream Blondie part of your celebrations! Whether you’re looking to bake one of our fan favorite recipes, like the decadent Tipsy Whiskey Cake, or want to leave the baking to us, we’ve got you covered!
Let’s kick things off with the cookies that have been getting all of the attention lately! The Luck of the Irish cookie box has been stealing the show, and we’re so happy you’re loving them! The triple chocolate Baileys (think chocolate cookie meets boozy brownie!), Irish coffee (why drink it when you can eat it!), and shamrocked-out birthday cake cookies have been getting rave reviews!
This limited edition collection is only around for a few more days, so if you’re thinking about it, don’t think too long!
Time to break out the shamrocks, sprinkles and the Baileys! While everyone’s favorite Shamrock Cookies sold out in record time, you can still make them at home!
Baileys Shamrock Cookies have Irish cream in the filling and in the cookies, and are pretty much a party waiting to happen! Whether you go classic with the sprinkles, or make my custom rainbow shamrock sprinkle mix, they’re a whole lot of happy!
Moving right along to the brownie recipe you guys love most and the one I ALWAYS go back to: Bailey’s Irish Cream Brownies! These truffle brownies are rich, decadent and everything you could ever want in a brownie. As they cool, they sink a bit in the middle, taunting you until you grab a spoon…
While they’re fantastic as is, you might want to top them with a generous layer of Baileys buttercream , because why hold back now!
When you want cheesecake without the work, you want Boozy Irish Cream Cheesecake Pops! These gems are so easy to make and perfect for any occasion! My favorite way to serve these is to set up a dessert bar with a bowl of magic shell and a few bowls with different topping, such as sprinkles, crushed Oreos and toasted pecans, and then let everyone get involved!
There’s no way we can talk St. Patrick’s Day without mentioning my go-to Irish Brown Bread! I can tell you this is the best brown bread recipe I have ever made and that’s because it comes direct from one of my dearest friends. It’s one of those recipes that needs no tweaking, always turns out perfect and reminds me of home. Whether it’s to pair with a traditional Irish breakfast, dinner, or a cup of tea, brown bread is a must on Saint Patrick’s Day!
And I saved the best for last! The Irish Whiskey Layer Cake is one of those cakes that should be made all year, and most definitely on Saint Patrick’s Day! Whether you’re hosting, or just feel like baking a fantastic cake, this is sure to be the star of the show.
Layers of whiskey infused chocolate cake, filled with Irish cream buttercream and topped with spiked mascarpone whipped cream! And can we talk about that Jameson ganache dripping down the sides!
There are some decisions to be made here, friends! I hope you all have a happy St. Patrick’s Day, and remember to keep tagging us on Instagram so we can share your bakes!
