Who’s ready to dive into summer? While it may not be the official start to summer, Memorial Day weekend equals summer to me and I am ready! Bring on vacation, beach days, concerts and fruity drinks. Fruity drinks are definitely high on that list, especially margaritas. And there is no better way to say hello to the warm weather than with a batch of margarita granita. Even better – strawberry margarita granita, filled with fresh strawberries, tequila and Grand Marnier!
So this recipe is a spin on my original margarita granita. Loaded with tequila, lots of citrus and a good dose of lime zest, I truly thought it couldn’t get any better. That is until I invited strawberries to the party. I pureed a bunch of beautiful strawberries, got to mixing and before long, I had summer staring back at me! The strawberry puree adds so much to this recipe and complements the Grand Marnier really well. It’s one of those recipes where you have to tell yourself repeatedly to put the spoon down and stop “tasting” or it might never make it into the freezer!
The granita takes a good 24 hours to freeze well and it’s so worth the wait! All those flavors come out and the lime zest makes it pop. Whether you’re lounging by the pool or firing up the grill, this fruity, boozy frozen delight is a good idea. Serve it up in some margarita glasses and say cheers to summer!
- 1 cup strawberry puree
- 2 cups water
- 1 cup sugar
- 1/2 cup lime juice
- 1/3 cup lemon juice
- 6T. Tequila
- 4T. Grand Marnier
- 2T. Triple sec
- zest of 1-2 limes
- Make a simple syrup with the sugar and water. Simmer water and sugar in small saucepan till sugar is dissolved.
- Remove from heat.
- Add the rest of the ingredients and mix together.
- Transfer mixture to a shallow baking dish and freeze. This will take a good 24 hours to freeze really well.
- Before serving, scrape the granita with a fork.
