Now this is how you start a Monday! So many exciting desserts to share with you guys today, from the best ice cream sandwiches ever to the dreamiest summer cupcakes! With so many new faces here lately and all of us baking more than ever, I thought what better time to do a really fun baking bucket list! I picked a variety of recipes including your faves, such as the lush lemon blueberry loaf sitting pretty up top, the sweetest Black Forest cake makeover, and a few of the frozen variety – like the best homemade chocolate ice cream. Guys, it’s so good, I wish I could just hand it to you!
My hope is that we can bake through the list together, or maybe pick one that you’ve always had your eye on and give it a whirl. I’ll also be sharing some new recipes and videos I’ve been working on over the next few weeks so we’re going to have some fun!
I have to kick things off with these epic Black Forest Cupcakes because they’re SO good and I picked up a few pounds of cherries yesterday so it’s on this week! The classic dessert is taken to a new level with chocolate Amaretto cupcakes, vanilla bean roasted cherries and a beautiful vanilla bean mascarpone whipped topping.
Spoiler alert: I have some new videos coming your way so make sure to subscribe on YouTube so you don’t miss out!
So many of you hopped on these Margarita Bars as soon as I posted them and I swear they’ve been getting me through summer! If you love margaritas and desserts that are both light and lush, these are for you!
Continuing on the bar train are these delightful little fruit crisp bars and I have two varieties for you. The first are my strawberry rhubarb crisp bars and the story goes something like a classic fruit crisp met an old-fashioned cocktail and the rest is history!
The second option is the strawberry crisp bars and these are perfect if you can’t find rhubarb, or if rhubarb isn’t your thing. No judgments here! Whether you finish the bars with glaze, or a big scoop of ice cream, they’re a total win!
Next up is how to get your cheesecake fix without turning the oven on! These Baileys Cheesecake Pops are everything you love about the classic without the work + Baileys + sprinkles. You’re not going to believe how easy they are!
Lemon Blueberry Loaf is another reader favorite and it’s one of those desserts I find myself going back to time and again. It’s simple, comforting and packed with bright, beautiful flavors.
I’ve never been big on breakfast, but make it cake, and I’m in! Peach Bourbon Crumb Cake is one of my go-to summer bakes and whether you’re calling it brunch, a snack, or dessert, it’s a must for peach season. Just don’t skimp on the bourbon glaze!
Okay, I don’t like to play favorites, but these Blueberry Oatmeal Cream Pies are at the top of the list! These have been a reader fave for years and thanks to a recent feature, their fan base continues to grow by leaps and bounds. Huge thanks to all of you who’ve shared your photos with me on Instagram and Facebook as well! I love seeing and highlighting your bakes!
Anyone else feel like they’re enjoying more boozy milkshakes than ever before?! While there are quite a few I love, the Pink Squirrel is the one I always go back to! It’s my spin on the retro cocktail and the roasted strawberries are what make it the ultimate summer shake.
If you’ve never made homemade ice cream, there’s no time like the present! Ice cream is one of those things that once you bite the bullet and make it once, you’ll realize just how simple it is. This chocolate ice cream is one of my favorite recipes to date because it tastes like frozen chocolate creme brûlée. Serve it in dolled-up ice cream cones for the ultimate experience!
Once you’ve checked homemade ice cream off your list, you’ll definitely want to jump into homemade ice cream sandwiches! Nutella Frangelico Ice Cream Sandwiches have summer written all over them! The Frangelico ice cream is smooth with a hint of that hazelnut liqueur floating around, and sandwiched between 2 soft-baked Nutella cookies is simply perfect! Roll them in your favorite chocolate, toasted hazelnuts, or sprinkles! You had to know that was coming!
Thanks for following along and for sharing all your bakes with me. I’m looking forward to sharing some new desserts with you over the next few weeks, including a fantastic recipe for no-churn ice cream, which many of you have requested! If there’s any other desserts or videos you’d like to see, leave me a comment or post over on Instagram.
Happy baking! xo
