Helllloooo, summer! When I think summer, I automatically think s’mores, which is why I think it’s only fitting that we kick off the season with an incredible, over-the-top s’mores cheesecake. With a graham cracker crust, creamy vanilla bean marshmallow filling, decadent chocolate ganache topping, and mounds of toasted marshmallows, this just may be the new go-to – no campfire required!
I don’t know about you, but I feel like cheesecake is always a good idea, especially when it’s dripping in chocolate ganache! We start out with a classic graham cracker crust parked under a dreamy vanilla bean cheesecake filling. The vanilla bean cheesecake filling is all sorts of divine to begin with, and then I went and added mini marshmallows right to the batter – everyone in the pool! This may have been the best idea yet because as the cheesecake bakes, the marshmallows start to melt into the batter and the top of the cheesecake will get some golden spots where those mini marshmallows are parked, basically caramelizing everything, and enhancing all the flavors. I told ya this was good!
Then we introduce the ganache and the party really gets started! It’s totally up to you whether you want to use milk or dark chocolate for the ganache. I feel like milk is the obvious s’mores choice, but a beautiful dark chocolate will really elevate the cheesecake and balance out the other components. My only recommendation is to use a good quality chocolate here, as it really does make a difference in both taste and overall quality. I’m talking shine and drip factor here, guys!
Just when you thought it couldn’t get any better, it so does. Set your oven to broil, toast some marshmallows to your desired level of golden, and just try not to eat them all before piling them on the cheesecake! Sticky fingers, party of one right here…
As soon as they’re cool enough to handle, pile them on top of the cheesecake (my motto is more is more!) along with graham cracker pieces, and then finish her off with a good drizzle of chocolate ganache for that intentional s’mores messy, drippy goodness look!
