Let’s go! Bring on the beach days, road trips, lobster rolls, fruity umbrella drinks and vacation! The unofficial official start to summer is here and my biggest concern at the moment is how many events I have coming up that I can make the Boozy Black Forest cupcakes for. Priorities!
And then there’s the Bailey’s cheesecake pops and the pink squirrel milkshakes! How many reasons can I come up with to make a batch of those gems? Pool parties, girls’ night, just because night, dinner – oh, the possibilities! Can you tell the blender is ready to go?
I’ve rounded up my top desserts to kick off summer and I just love this time of year because while you’ll definitely want to pin the no-bake dreamboats for the next few months, right now it’s still cool enough to jack that oven and roast ALL the fruit!
Seriously, roasted strawberry boozy milkshakes now!
The Pink Squirrel 2.0 is a frozen twist on the retro drink and these are a must for summer! You guys know I’m all about roasted strawberries, but roasted strawberries in a milkshake is where it’s at! Serve them up in little mason jars complete with a Nilla wafer rim and don’t forget to invite me over – okay?
When you want cheesecake without the work, you want Boozy Irish Cream Cheesecake Pops! These gems are so easy to make and they’re great for parties! My favorite way to serve these is to set up a dessert bar with a bowl of magic shell and a few bowls with different topping, such as sprinkles, crushed Oreos and toasted pecans and then let your guests do the dipping!
If you’re going to make Baileys cheesecake pops, you definitely need to make a batch of homemade magic shell! It’s pretty amazing when paired with the best chocolate ice cream too, just don’t forget the sprinkle-ized cones!
I spotted cherries the other day, which means it’s time for vanilla bean roasted cherries! Spoon these over ice cream, your morning yogurt, or my favorite Black Forest cupcakes! My only advice is to make extra because they disappear in a snap.
Now it’s time to put those roasted cherries to good use! These dolled-up Black Forest Cupcakes are topped with fluffy mascarpone frosting, covered with roasted cherries, toasted almonds, and dark chocolate shavings! I can’t even! Plus, there’s a video with these so we can bake together 🙂
No-bake, beyond easy and full of peanut butter – does it get any better? No-bake peanut butter krispie treats have a drizzle of chocolate and a sprinkle of sea salt that makes them a must for all your summer get togethers!
If you were a fan of strawberry shortcake ice cream pops, you’re going to love these Strawberry Rhubarb Ice Cream Sandwiches! The strawberry rhubarb ice cream hits all the right notes and is pure heaven paired with the soft baked brown sugar cookies.
Red, white and blue swirl cake is one of those desserts that makes you want to throw a party just so you can make it. And even better, it’s actually really easy to make. And those cake crumb “sprinkles” on top? I’m still completely obsessed!
As soon as you get your hands on some peaches, give this Peachy Bourbon Crumb Cake a try and don’t skimp on that bourbon glaze! This is also pretty sweet with a scoop of vanilla ice cream on top! So I’ve heard…
It’s not summer until someone breaks out the s’mores! I take mine in the blender with a little of the good stuff! Boozy S’mores Shakes are a party waiting to happen!
In case you missed it on Instagram yesterday, Raspberry Cheesecake Icebox Cake is definitely not your mama’s ice box cake! This luscious berry fest is light, satisfying, fruity, and that layer of spiked whipped cream parked on top doesn’t hurt either! There’s also a sweet giveaway going on so make sure to check it out!
Do you have big plans this weekend? Do you know what you’re going to make? I gotta tell ya, I think that icebox cake is tradition in the making for me! I’ve already got some new desserts I’m itching to share with you guys this summer, and if there’s a seasonal sweet you’d like to see, leave it in the comments! If it’s fruity and boozy, I’m in!
Happy baking and have a great holiday weekend!
